Personally, If I were you, I would stick to the Fjord Norway route, which is full of unbelievable nature. Every day is amazing. It seems a long way to cycle a 16km road that is full of tourist traffic.

My rule is never to try and do too much on a bike. You stop enjoying the moment when you are too focused on a tick list of places you must see. It’s the places and roads that aren’t on the tourist map that you may enjoy more.

That is just my opinion. I’m sure others will have different views.
