Ålesund to Vinstra means crossing over the mountains. There are limited gravel roads on the west coast of Norway. You will also be required to cycle one or two roads that may have a bit of traffic (mostly tourist traffic). The link below is a route I would recommend and allows you to experience many of the best roads in Norway. However, Dalsnibba from Geiranger is a long and challenging climb. In addition, there are only two ferries a day crossing the northern part of Hjørundfjorden so you will need to time them right.
If you want to add more gravel to the route, at Vågåmo you could go more direct south following the Great Norwegian Divide route, which joins on to Mjølkevegen and bypass Vinstra.

Lastly, if you want flatter terrain, continue following the eurovelo 1 to Trondheim and take a train to Vintra from there.
