This is one of the hardest questions to answer as all bums are different, and it can be very personal what saddle works for you.
However, you first need to address what you need the saddle for. Day road trips or long-distance bikepacking/touring?

For day rides and short (a few days) gravel adventures, I want something that is light but built for endurance and not racing.

I have the PRO Stealth Curved Performance Sete, which is around 130-150 euros and very comfortable and light, but I wouldn’t use it for more than 3-5 days on a bike tour.

When you are riding every day for a week or more, I want something built for that sort of touring. As you mention, the go-to saddle for many people is the Brooks B17. It’s heavy and wide but the leather molds to your seat bones and after 300-500km you should have a very comfortable touring saddle. But if you do invest in one, you need to treat the leather with a kind of bee wax for several weeks and then every so often after that. I was poor at doing this, and the leather harden up and made it uncomfortable until I treated the leather better.

Please note, the brooks b17 is not for road bikes and will look out of place on one.

This is a good website with some of the best saddles on the market (some more suited for road bikes). I know a lot of people using these brands, and I’m sure one of these will work better for you.
My advice is not to go cheap with a saddle it’s worth spending the money and investing in quality that will last a long time.
